With the VPS packages is email running on the same box or is email still kept on HMS mail servers?

On the Windows VPS's, your mail server (SmarterMail) is on the same machine. If you want it on a different machine, you can always have two VPS's. Not sure about Linux VPS.

Linux VPS's mail is run through the VPS as well (the exact MTA depends on the control panel).
I'm not sure whether they still have the e-mail only plans, but you could purchase one of them, and change your MX record to use that mail server, and run it from HMS's mail servers still, but you would have to pay for the additional account (it doesn't come included with the VPS).
